Mom’s Oatmeal Chocolate Chip Cookies.

My mom was the best cook I knew.  Her amazing meals are deeply missed.  One of the ways I try to reconnect with her is through her recipes.  An easy recipe to make for parties is her version of Quaker’s Oatmeal Cookies.    See recipe below.

Mom’s Quaker Oatmeal Chocolate Chip Cookies

Ingredients:

1/2 cup (1 stick) plus 6 tablespoons butter softened

3/4 Cup firmly packed brown sugar

1/2 Cup granulated sugar

2 Eggs

1 teaspoon vanilla

1-1/2 cups(s) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3 cup(s) Quaker Oats (quick or old fashioned, uncooked)

1 cup chocolate chips

Preparation:

Heat oven to 350 Degree F.

In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.

Add eggs and vanilla, beat well.

Add combined flour, baking soda, and salt; mix well.

Add oats and chips; mix well.

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 8-10 minutes or until light golden brown.

Cool 1 minute on cookie sheets; remove wire rack.  Cool completely.

Store tightly covered.
